a small accomplishment!

today I swam! I wasn't even that cold. Too bad my Y is going away soon. They're relocating. I only have that pool until June 30th. :( I didn't use the snorkel on account of me nearly dying the last time I tried that.

Tonight I made pesto. Verdict: not that great. Ingredients: water, 2 bunches basil, 1 bunch cilantro, some red wine vinegar and some rice vinegar. I think I got the ingredients wrong because it was a bit strong. I added nutritional yeast to make it palatable. I'm going to have to google recipes until I find a pesto I can make that's vegan and lowfat (no oil or nuts). Not that easy. Rainbow has one that's cashew-based but it tastes a little too rich for me. I'm not even sure what goes in pesto. Except mine is not going to have parmesan nor olive oil. Nor vinegar next time. Inyad? Know you how to make vegan pesto?

In other news, I started rereading the grammar book from my grammar class in college for my bus commute. However I don't know if I'm going to keep it up since I need to actually do the exercises or else I'll just have to reread it anyways.

Pesto has garlic, cheese, olive oil, and the basil. Definitely no vinegar and that's why it was too strong. Good luck on finding replacements for the oil and chese!

thank you! i totally forgot garlic. what about cilantro? is that in there? i thought pesto had cilantro. i like cilantro. i don't know what i can use instead of oil and cheese, but i did find a vegan recipe using artichoke hearts. i'm not sure though, aren't they bitter?
