I made ghetto pad thai today. It all started when I was hungry and decided to eat in as opposed to spending more money (I just went to an amusement park.)
I scanned my cupboards and found: coconut milk, can tomato sauce, "chinese" noodles, other seasonings and oils, Corn Pops, peanut butter, and brown sugar.
I invested $2.50ish in a head of lettuce and two tomatoes and concocted something yummy - a cross between Pad Thai and Kai Kur. Only less vegetables. It would have been better with more veggies. I used Corn Pops instead of chopped peanuts (they're 5 bucks a can... horror! Gasp!)
All in all, I sit stuffed and proud. I did a Dayni :)
